做(zuò )法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热(rè )锅,用姜块在锅上擦一(yī )遍,放两勺(sháo )油,待油六成(chéng )热下鱼,煎至(zhì )微(wēi )黄。煮(zhǔ )沸瓦(wǎ )煲里的清水,放入煎煮好的鲫鱼和其(qí )他材料,武火煮沸,转中(zhōng )小火(huǒ )煲(bāo )一(yī )个半小时(shí ),下盐调味即可品尝。 -
