做法:春(chūn )笋切(qiē )成(chéng )片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝油翻(fān )炒均匀,加入少量清(qīng )水半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时(shí )候加入(rù )盐(yán ),翻炒(chǎo )均匀稍收汁时盖上锅盖焖。 -
