做(zuò )法:洗净宰好鲫鱼(yú ),洗净淮山和薏米。用清水把陈皮泡软,拍裂(liè )一小块(kuài )姜,热锅(guō ),用姜块在锅上擦一(yī )遍(biàn ),放两勺油,待油六成热(rè )下鱼,煎(jiān )至微黄。煮沸瓦煲里(lǐ )的清(qīng )水,放(fàng )入(rù )煎煮好的鲫鱼和(hé )其他材料,武火煮沸,转中小火煲(bāo )一(yī )个(gè )半(bàn )小时,下盐调味即可品尝。 -
