做法(fǎ ):春笋切成片后加少许盐捞出(chū )后(hòu )用清水浸泡,生姜切(qiē )片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少量清(qīng )水半掩住(zhù )春笋(sǔn ),盖上锅盖(gài )大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。 -
